No Bake Apple Pie Protein Cheesecake

No Bake Apple Pie Protein Cheesecake

Ingredients

Cheesecake

1 scoop Prodough Maple Donut Whey Protein Powder

4 oz light cream cheese, softened

1 cup Greek yogurt

1 tbsp pure maple syrup


Graham Cracker Crust

8 graham crackers

¼ cup coconut oil, melted


Warm Cinnamon Apples

2 large apples, diced

1 tbsp maple syrup

1 tbsp lemon juice

½ tsp cinnamon


Instructions:

  1. Prepare Apples. Add apples, maple syrup, lemon juice, and cinnamon to a saucepan over medium heat. Stirring occasionally, cook until the apples are tender and syrupy, about 6-8 minutes.
  2. Combine Maple Donut Whey, light cream cheese, Greek yogurt, and maple syrup in a large mixing bowl. Using a stand mixer or electric hand mixer, whip on medium until completely combined, about 3-4 minutes.
  3. Prepare graham cracker crust. Melt coconut oil in the microwave until liquid, 15-20 seconds. Add graham crackers to a food processor and pulse until crushed. Add coconut oil and pulse until the mixture reaches a wet sand texture.
    1. Note: you can also crush the graham crackers by hand with a mortar and pestle or in a bag with a rolling pin.
  4. Assemble cheesecakes. In small ramekins or a 1-quart pan, firmly press the graham cracker mixture into the base. Spoon the whipped cream cheese mixture over the top, and top with the warm apple mixture.
  5. Enjoy immediately if you must, but we recommend chilling for at least an hour before enjoying to allow the cheesecake to firm up.
