Protein GF Pizza Pinwheels

Game Day Recipe: High Protein Pizza Pinwheels (Gluten Free)
No protein powder required.
1 cup ProDough gluten-free flour
¾ cup Greek yogurt
1 ½ tsp baking powder
½ tsp sea salt
⅓ cup jarred pizza sauce
½ cup turkey pepperoni, or to your liking
3/4 cup mozzarella cheese
- Preheat the oven to 425 degrees Fahrenheit. Prepare the crust: add flour, baking powder, and sea salt to a large mixing bowl and stir to combine. Add Greek yogurt, and knead by hand until the mixture forms a ball. Roll the dough into a long rectangle about ¼ inch thick.
- Lightly oil a large baking sheet. Layer the dough with the sauce, cheese, and pepperoni slices. Starting at the long edge, roll the dough into a log. Using a sharp knife, slice the log into ½ inch thick disks, and place them on the baking sheet. Bake for 15-18 minutes, or until the pinwheels are golden and crispy on the bottom.
- Note: Alternatively, use unflavored dental floss to slice the log. Drag a small piece of floss under the log, and bring the ends of the floss up to cross the thread at the top. Keep pulling the floss so that it crosses through the dough, cutting your perfect slices.
- Serve warm with additional pizza sauce, and enjoy!
