Mango Tiramisu


Ingredients
2 cups mango, diced
12 lady fingers
¾ cup hot water

Filling
1 cup cottage cheese
8 oz mascarpone, at room temperature
2 scoop ProDough Glazed Donut Whey

For Garnish
Fresh mint
Directions:
Add half of the mango to a blender and puree until smooth. Remove ¼ cup of the puree. Add the cottage cheese to the blender and blend with the remaining mango until smooth.
Add the cottage cheese mixture, mascarpone, and protein powder to a stand mixer. Mix on high until light and fluffy, about 3-4 minutes.
Add a spoonful of the whipped protein mixture to the bottom of a serving dish to create a thin layer. Add the reserved mango puree and hot water to a shallow bowl. Lightly soak half of the lady fingers in the mango mixture for 1-2 seconds each, and arrange in the prepared baking dish to create a single layer. Add half of the whipped protein mixture, and spread into an even layer.
Repeat with the remaining lady fingers and whipped protein mixture. Top with the remaining cup of diced mango, garnish with fresh mint, and refrigerate for at least an hour to set. Enjoy!
