Protein Parfait with Quinoa Granola

Ingredients
1 scoop ProDough Raspberry Cheesecake Whey
1 cup plain nonfat Greek yogurt
1 cup berries of choice

Quinoa Granola
1 cup cashews, roughly chopped
1 cup rolled oats
1/2 cup quinoa
1/4 cup honey
3 tbsp brown sugar
3 tbsp coconut oil, melted
1 pinch sea salt

Directions:
Preheat the oven to 350 degrees Fahrenheit. Combine the cashews, oats, quinoa, honey, brown sugar, coconut oil, and sea salt until evenly mixed.
Spread the mixture into a thin layer on a baking sheet lined with parchment paper. Bake for 25 minutes, or until golden and toasted. Set aside to cool completely before breaking into clumps.
Mix together the yogurt and whey until smooth. Top with berries and granola clusters to taste. Store the leftovers in an airtight container for up to one week.
