Protein Peppermint Cocoa Tiramisu

12 lady fingers
½ cup coffee

2 scoop ProDough Mint Chocolate Whey
8 oz mascarpone, at room temperature
2 oz semi-sweet baking chocolate
½ cup Greek yogurt
½ tsp peppermint extract

Cocoa Powder
Directions:
Microwave the baking chocolate at 15-second intervals until melted. Add whey, mascarpone, Greek yogurt, melted chocolate, and peppermint extract to a mixing bowl. Mix on high until light and fluffy, about 3-4 minutes.
In a shallow bowl, add the coffee. Add a spoonful of the mascarpone filling to the bottom of a small ceramic or glass dish and spread into a thin layer. Drench half of the lady fingers in the coffee mixture, and arrange in the prepared baking dish to create a single layer. Add half of the remaining mascarpone mixture, and spread into an even layer.
Repeat with the remaining ladyfingers and mascarpone. Top with a dusting of cocoa powder and crushed peppermint candies. Refrigerate for 30 minutes before serving. Enjoy within 2 days!
