Almond Croissant Baked Oatmeal


Ingredients
Baked Oatmeal
2 scoop Sugar Cookie ProDough Whey
1 cup milk of choice
1 ½ cup rolled oats
1/2 tsp baking powder
1 large egg
½ cup slivered almonds

Almond Croissant Topping
¾ cup almond flour, toasted
6 tbsp melted butter
½ cup packed light brown sugar
2 large eggs, at room temperature
½ teaspoon almond extract
½ teaspoon kosher salt
Directions:
Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 0.5 quart ceramic baking dish with cooking oil.
Add the egg to a large mixing bowl, and whisk until no white streaks remain. Add milk, protein powder, milk, and baking powder, and combine.
In a separate mixing bowl, combine the almond flour, butter, brown sugar, eggs, almond extract, and salt, and combine until a thick paste forms.
Pour the oat mixture into the prepared dish, top with the almond flour mixture, and garnish with slivered almonds.
Bake for 30-35 minutes, or until the oats are cooked through and puffed up. Dust with powdered sugar if desired, and serve!
