Blueberry Protein Muffins

Ingredients
1 cup ProDough Protein Pancake Mix
½ tsp baking powder
¼ teaspoon kosher salt
3 tbsp butter, at room temperature
⅓ cup granulated sugar
1 large egg, at room temperature
¼ teaspoon vanilla extract
3 tbsp milk of choice, at room temperature
¾ cup blueberries
Nonstick cooking spray

Directions:
Preheat the oven to 350 degrees Fahrenheit. Whisk together the protein pancake mix, baking powder, and salt.
In a separate bowl, using a hand mixer, cream together the butter and sugar until fluffy, about 3 minutes. Add the egg, vanilla extract, and milk, and blend until well combined, about 2 minutes.
Add the dry ingredients to the wet, and mix until just combined. Fold in the blueberries.
Distribute the batter into a standard lined muffin tin, and bake for 22-24 minutes, or until a toothpick comes out with a few moist crumbs.
