Protein Lemon Bars
Ingredients
Crust
1 1/2 cup oat flour
2 scoops Prodough Coconut Cream Whey Protein Powder
5 Tbsp coconut oil, melted
Pinch sea salt
Custard
4 eggs
½ cup honey
½ cup lemon juice
2 tbsp almond flour
2 tsp lemon zest
Directions:
- Preheat the oven to 325 Fahrenheit. Combine oat flour, protein powder, melted coconut oil, and sea salt. Press into an even layer in an 8x8 inch pan lined with parchment paper.
- Bake for 12-15 minutes, or until lightly toasted and golden.
- Meanwhile, whisk together 4 eggs, honey, lemon juice, almond flour, and lemon zest until completely combined.
- Carefully pour over the toasted crust and return to the oven for 20-25 minutes, or until the custard is set in the center with just a slight jiggle. Allow to cool completely before removing from the pan, then slice into 16 squares and serve.
