GF Single-Serve Cinnamon Rollš
Ingredients
Roll:
1/2 cup ProDough gluten free baking flour blend
2 1/2 tbsp milk of choice
1/2 tbsp avocado oil
2 tsp sugar
½ tsp baking powder
Pinch of salt
Filling:
1 tbsp butter, melted
3 tbsp brown sugar or brown sugar alternative
½ tsp cinnamon
Pinch of salt
Cream Cheese Frosting:
1 oz light cream cheese, at room temperature
2 tbsp powdered sugar or powdered sugar alternative
¼ tsp vanilla bean paste
Pinch of salt
Directions:
1. Preheat the oven to 350 degrees Fahrenheit. Prepare an oven-safe ramekin by greasing it with cooking spray or butter.
2. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Add the milk and avocado oil, and mix until the dough forms into a single mass. Add 1 tbsp of flour at a time as needed. Knead by hand a few times until the ball is smooth.
3. Prepare the filling. In a small bowl, combine the melted butter, brown sugar, cinnamon, and salt.
4. Lightly dust a clean work surface, and roll the dough into a narrow oval shape about ¼ inch thick. Spread the cinnamon sugar filling evenly over the dough. From the short side, roll the dough tightly into a spiral.
5. Place the roll in the prepared ramekin, spiral side up, and bake for 18-20 minutes, or until golden and bubbling.
6. While the roll bakes, prepare the frosting. Add the cream cheese, powdered sugar, vanilla bean paste, and salt to a small bowl, and mix vigorously until the mixture is completely smooth.
7. Once the roll is baked, remove it from the oven and cool for 5 minutes before loosening the edges with a knife and removing from the ramekin. Frost with the cream cheese frosting, and enjoy immediately!
