APPLIE CINNAMON PROTEIN BLONDIES🍎
Blondies:
2 scoops ProDough Apple Pie Whey
2 large eggs
1 large egg yolk
2 cups all-purpose flour

1 ¾ cups light brown sugar, tightly packed

1/2 cup butter, melted
1/2 cup unsweetened applesauce

2 tsp cornstarch

1 ½ tsp vanilla extract

1 tsp cinnamon
1 tsp baking powder

1 tsp salt
Apples:
1 cup diced apples
1 tsp cinnamon
Cinnamon Cream Cheese Frosting:
3 ounces cream cheese, softened

1 ½ cups confectioners’ sugar
¼ cup unsalted butter softened

1 tsp vanilla extract

1Â tsp cinnamon
1 pinch salt
Instructions:
Preheat the oven to 350°F and prepare a 9×9-inch pan by lining it with parchment paper.
Preheat a saucepan over medium heat. Add the apples and cinnamon, and cook until softened.
Note: add a splash of water if the apples are dry and not cooking down.
Whisk melted butter, applesauce, and brown sugar in a large bowl until fully incorporated. Add the eggs and the egg yolk, one at a time, whisking well after each addition. Whisk in the vanilla extract.
Add the whey, flour, cornstarch, baking powder, and salt. Using a rubber spatula, gradually stir the flour mixture into the butter and egg mixture until completely combined. Fold in the apples until they are evenly distributed.
Spread the blondie batter evenly into the prepared baking dish, and bake for 35-38 minutes, or until the edges just begin to turn golden brown and the center is no longer jiggly.
Set aside to cool completely before adding the cream cheese frosting.
Put cream cheese, butter, confectioners sugar, vanilla, and salt in a stand mixer fitted with the paddle attachment.
Mix on low until just combined. Once ingredients are all incorporated, turn the mixer on high and leave it for 4-5 minutes. Frosting should be light and fluffy.
Spread frosting over cooled blondies.
