No Bake Protein Tiramisu

No Bake Protein Tiramisu

Ingredients

12 lady fingers

½ cup espresso or strongly brewed coffee


Filling

1 scoop iced mocha whey protein powder

1 cup Greek yogurt

8 oz mascarpone, at room temperature

½ cup raw cane sugar


For Dusting

2 tbsp cocoa powder


Directions:

  1. Add Greek yogurt, mascarpone, cane sugar, and protein powder to a stand mixer. Mix on high until light and fluffy, about 3-4 minutes.
  2. Lightly dust a small ceramic baking dish with cocoa powder. Pour the espresso or coffee into a shallow bowl. Lightly soak half of the lady fingers in the coffee for 1-2 seconds each, and arrange in the prepared baking dish to create a single layer. Add half of the whipped yogurt mixture, and spread into an even layer.
  3. Repeat with the remaining lady fingers and greek yogurt. Dust with additional cocoa powder, and refrigerate for at least an hour to set. Enjoy!
