No Bake Protein Tiramisu
Ingredients
12 lady fingers
½ cup espresso or strongly brewed coffee
Filling
1 scoop iced mocha whey protein powder
1 cup Greek yogurt
8 oz mascarpone, at room temperature
½ cup raw cane sugar
For Dusting
2 tbsp cocoa powder
Directions:
- Add Greek yogurt, mascarpone, cane sugar, and protein powder to a stand mixer. Mix on high until light and fluffy, about 3-4 minutes.
- Lightly dust a small ceramic baking dish with cocoa powder. Pour the espresso or coffee into a shallow bowl. Lightly soak half of the lady fingers in the coffee for 1-2 seconds each, and arrange in the prepared baking dish to create a single layer. Add half of the whipped yogurt mixture, and spread into an even layer.
- Repeat with the remaining lady fingers and greek yogurt. Dust with additional cocoa powder, and refrigerate for at least an hour to set. Enjoy!
