Protein Air Fryer Fruit Wontons

Protein Air Fryer Fruit Wontons 🍓

Ingredients
40 wonton wrappers

Strawberry Filling
1 cup strawberries, diced
1 tbsp honey or sweetener of choice

Protein Cream Cheese Filling
1 scoop ProDough Vanilla Whey Protein Powder
8 oz light cream cheese, room temperature
½ cup plain Greek yogurt

Directions:
Preheat a skillet over medium-low heat. Add the strawberries and honey, and cook, stirring occasionally until they reach a jam-like texture. Add a splash of water as needed if the berries dry out.
In a large mixing bowl with a hand mixer, add the protein powder, cream cheese, and Greek yogurt. Mix on medium speed for 2 minutes, or until fluffy and fully incorporated.
Working with up to 4 wonton wrappers at a time, add about ½ tsp of the cream cheese mixture and cooked fruit to the center of the wonton wrapper. Lightly brush the edges of the wonton wrapper with water, and gently bring all four corners together over the filling. Press seams together until they stick. Set aside in the air fryer basket, leaving about 1 inch of space between each wonton.
Note: air fry in batches, but only assemble as many wontons as you can air fry to avoid the wrappers drying out.
Lightly spray each wonton with cooking oil, and air fry at 350 degrees Fahrenheit for 5-6 minutes, or until lightly golden.
Remove from the air fryer, and repeat steps 3 and 4 until all the wontons are assembled and fried.
