Protein Almond Joy


Ingredients
1 scoop ProDough Vanilla Whey
2 cup shredded coconut
1 cup chocolate melting chips
¼ cup honey
12 almonds

Directions:
1. Add whey, shredded coconut, and honey to a mixing bowl and stir until evenly mixed, and the
coconut mixture holds loosely together when pressed.
2. Press the coconut mixture into a small baking dish lined with parchment paper. Press down firmly
into and even layer. Press the almonds into the coconut roughly where the center of the bars will
be after they are cut into 12 rectangles. Freeze for at least 30 minutes.
3. Once frozen, slice into 12 small rectangles of equal size. Melt the chocolate in the microwave or
over a double boiler until liquid. Using your hands or a fork, carefully coat the frozen coconut
bars evenly in the chocolate.
4. Place on a rimmed baking sheet or clean sheet of parchment paper to cool and set. Refrigerate or
freeze until set. Enjoy!
