Protein Black Forest Cheesecake
Ingredients:
Cheesecake:
2 scoop ProDough Chocolate Mousse Whey
8 oz light cream cheese, at room temperature
¾ cup Greek yogurt
Crust:
½ cup chocolate graham crackers, crushed
2 tbsp coconut oil or butter, melted
Cherry Topping:
1 cup frozen sweet dark cherries
¼ cup maple syrup or sweetener of choice
½ tsp almond extract
Garnish:
1 cup whipped topping
Directions:
•Add cherries and sweetener to a small saucepan over medium heat. Bring to a simmer, and cook until the cherries are softened, and the juices have thickened to a syrup. Remove from the heat, and stir in the almond extract.
•Crush chocolate graham crackers. Combine crushed cookies and melted coconut oil until a wet sand texture forms. Press the mixture into 3 small coup glasses, mason jars, or ramekins.
•In a stand mixer or with a hand mixer, beat together the whey, cream cheese, Greek yogurt on medium speed until smooth and fluffy, about 2 minutes.
•Spread the cream cheese mixture over the crust.
•Refrigerate to set for at least 30 minutes before enjoying. •Top with whipped cream and cherries, and enjoy!
