Cookie Crust

1 ½ cups gluten free flour

½ cup packed light brown sugar

½ cup butter, at room temperature

1 egg

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon almond extract

1/4 teaspoon salt


Protein Frosting

1 scoop ProDough Sugar Cookie Whey 

1 ½ cup plain Greek yogurt


Fruit Topping

1 cup strawberries, sliced

1 cup blueberries



  1. Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 9x13 inch baking dish. Using a stand mixer, mix the butter and brown sugar on high until creamy and fluffy, about 2 minutes. Add the egg, vanilla extract, and almond extract, and blend until combined, about another minute.
  2. Sift in the flour, baking powder, and salt, and mix until a dough forms. Spread the dough into an even layer on the prepared baking dish, and bake for 15-18 minutes, or until lightly golden and just set. Set aside to cool completely.
  3. Once cooled, whisk together the Greek yogurt and whey until completely smooth. Spread the frosting over the cooled cookie and distribute the fruit evenly over the frosting.
  4. Chill for at least 30 minutes before slicing and serving.
