Protein Fruit Pizza
Ingredients
Cookie Crust
1 ½ cups gluten free flour
½ cup packed light brown sugar
½ cup butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon almond extract
1/4 teaspoon salt
Protein Frosting
1 scoop ProDough Sugar Cookie Whey
1 ½ cup plain Greek yogurt
Fruit Topping
1 cup strawberries, sliced
1 cup blueberries
Directions:
- Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 9x13 inch baking dish. Using a stand mixer, mix the butter and brown sugar on high until creamy and fluffy, about 2 minutes. Add the egg, vanilla extract, and almond extract, and blend until combined, about another minute.
- Sift in the flour, baking powder, and salt, and mix until a dough forms. Spread the dough into an even layer on the prepared baking dish, and bake for 15-18 minutes, or until lightly golden and just set. Set aside to cool completely.
- Once cooled, whisk together the Greek yogurt and whey until completely smooth. Spread the frosting over the cooled cookie and distribute the fruit evenly over the frosting.
- Chill for at least 30 minutes before slicing and serving.
