Lemon Almond Skillet Cake
Ingredients
4 large eggs
2 scoops ProDough Sugar Cookie Whey
⅓ cup almondu flour
½ cup milk of choice
½ cup sliced almonds
1 lemon, zest and juice
2 tbsp butter
Garnish
Powdered sugar
Sliced almonds
Directions:
Preheat the oven to 400 degrees Fahrenheit. Add the eggs to a large mixing bowl, and whisk until no white streaks remain. Add the whey, almond flour, milk, sliced almonds, lemon zest, and lemon juice, and mix until smooth.
Preheat an oven-proof skillet over medium heat. Add the butter and melt completely. Slowly pour in the batter, and continue cooking until the edges have begun to set. Add batter. Cook on medium low until edges are set. Sprinkle with additional almonds. Place the skillet in the oven, and bake until set in the center, 10-15 minutes.
Remove from the skillet, slice, and garnish with additional sliced almonds and powdered sugar.
