Triple Berry Protein Pretzel Bars
Ingredients
Crust
¾ cup graham cracker crumbs
¾ cup pretzel crumbs
½ cup salted butter, melted
Filling
8 oz light cream cheese
1 cup Greek yogurt
2 scoops ProDough Vanilla Whey
Topping
1 cup sliced strawberries
1 cup blueberries
1 cup blackberries
1 tbsp sugar or sugar alternative
Juice of 1 lime
Directions:
Preheat the oven to 350 degrees Fahrenheit. Combine the strawberries, blueberries, blackberries, lime juice, and sugar in a mixing bowl until well combined. Set aside to marinate.
Combine the graham cracker crumbs, pretzel crumbs, and melted butter until well mixed. Press the mixture evenly into the bottom of a 9x9 inch baking dish, or a medium-sized baking dish of your choice. Bake for 13-15 minutes, or until toasted and set. Set aside to cool.
In the same bowl used to prepare the crust, add the cream cheese, Greek yogurt, and whey. Whisk using an electric mixer until fluffy with the protein powder is completely dissolved.
Once the crust is cooled, spread the cream cheese mixture evenly over the crust. Top with the macerated fruit, and refrigerate until set, at least 1 hour. Slice into pieces and serve.
