Protein Mango Sago 🥭
Ingredients
1 ripe mango
1 cup sago or small pearl tapioca
1 14 oz can unsweetened coconut milk
1 scoop Coconut Cream Whey
Directions:
Bring a pot of water to a boil. Reduce the heat to medium, and add the tapioca, cook for 10 minutes. Remove from the heat, and allow to continue cooking for 10-15 minutes, or until the tapioca is translucent.
Strain in a fine mesh strainer and rinse with cold water. Add the coconut milk and whey to the pot, and bring the mixture to a simmer, cooking until the coconut fat is melted and the whey is dissolved. Remove from the heat and stir in the tapioca pearls.
Transfer the pudding to six serving glasses and refrigerate for at least 1 hour to thicken. Before serving, cut the mango from the core and scoop the fruit from the peel. Slice into small cubes. Top the pudding with fresh mango, and enjoy.
