Protein Lemon Tiramisu

Protein Lemon Tiramisu


Ingredients
20 vanilla wafer cookies

Lemon Simple Syrup
½ cup hot water
Juice of 1 lemon
¾ cup sugar

Filling
1 cup Greek yogurt
8 oz mascarpone, at room temperature
2 scoop Vanilla Whey
Zest of 1 lemon

For Garnish
Fresh mint

Directions:
Add water, lemon juice, and sugar to a saucepan over low heat. Bring to a simmer, and simmer for 5 minutes, until the sugar has dissolved completely. Set aside to cool.
Add the Greek yogurt, mascarpone, protein powder, 2 tablespoons of the lemon simple syrup, and the zest of the lemon to a stand mixer. Mix on high until light and fluffy, about 3-4 minutes.
Dunk the vanilla wafer cookies into the lemon simple syrup, and place them in a single layer in a serving glass. Add a layer of the mascarpone filling by spoon or piping. Repeat the layering twice more until half of the cookies and mascarpone filling are gone. Repeat in a second glass.
Garnish with a lemon peel if desired, and enjoy.
