Valentine’s Day Protein Raspberry Mousse
Ingredients
Mousse
1 box sugar free raspberry jell-o
2 cups hot water
2 scoops Prodough Coconut Cream Protein Powder
1 cup plain Greek yogurt
Raspberry Coulis
1 ½ cup fresh or frozen raspberries
½ cup sugar
½ cup water
Topping (optional)
Whipped cream
Fresh raspberries
INSTRUCTIONS
- Add jell-o and hot water to a blender. Blend until the jell-o powder is dissolved
- Add the protein powder and Greek yogurt, and blend until smooth, about 1 minute.
- Pour into serving glasses, and refrigerate until set, about 4 hours.
- Meanwhile, prepare the raspberry coulis. Add raspberries, sugar, and water to a small pot over medium heat, bringing the mixture to a low boil. Smash the raspberries until they are broken up completely, and cook until the mixture is thickened and syrup-like, about 8-10 minutes.
- Once the mousse is set, top with the raspberry coulis, whipped cream, and fresh raspberries. Enjoy!
